Panino caldo con prosciutto cotto, melanzane, mozzarella e pomodori

Hot Panino with ham, grilled eggplant, mozzarella and tomatoes

Ingredients: (for one Panino)

1 Panino bread

1 slice of ham

2 slices of grilled eggplant

2 slices of mozzarella cheese

2 slices of tomatoes

dry oregano

extra-virgin olive oil


Wash the eggplant and slice it.

Heat your panini grill.

Put some extra-virgin olive oil in a bowl and with a brush, oil both sides of your eggplant slices.

Grill your eggplant slices.

Then place them on a plate and sprinkle them with oregano.

Slice your tomato, and the mozzarella.

Cut your Panino in two.

Place one one half the slice of ham that you have cut to fit the bread.


Add the eggplant slices.

Add the mozzarella.

Add the tomato slices.

Close your bread and place it int the preheated panini press.

Press your sandwich between the hot plates of your grill.

Once the mozzarella is melted and the bread is nicely colored, your Panino will be ready to serve.


  1. Yum yum! Or should that be gnam gnam 🙂 I love panini and it is what we always get along the autostrade in Italy from AutoGrill 🙂 This is a very nice combination, that I think would also work with crudo.
