Polenta al forno con Gorgonzola

Baked Polenta with Gorgonzola Cheese

Ingredients: (4 servings)

250 g  yellow Polenta

160 g Gorgonzola cheese

80 g butter

1 Liter 1/4 water

1 teaspoon salt

grated Parmesan cheese to taste

Directions:

Preheat your oven at 200 C.

Pour the water in a large sauce pan, add the salt and bring to a boil over medium heat.

Add the Polenta little by little to the boiling water, stirring constantly and vigorously with a wooden spoon.

Lower the heat and continue to stir until the Polenta thickens and moves away from the sides of the sauce pan.

Once the Polenta is nice and thick spoon it  into 4 individual oven proof bowls and add 20 g of butter in the center of each bowl.

Push the butter down until the Polenta covers it.

Add a slice 40 g of Gorgonzola cheese on the top of each bowl of Polenta and put the bowls in the pre-heated oven.

Cook for about 10 minutes until the Gorgonzola cheese has completely melted.

Take the bowls out of the oven, sprinkle them with grated Parmesan cheese and put them under the grill for a few minutes.

Serve hot accompanied by a glass of red wine.
